What is the correct way to remove these interior door handles?

Use a thin open end spanner on the square of the retainer and unscrew.

On my 1928 super six, I could push down the escutcheon to reveal the pin and push the pin out of the handle.

That is for the window cranks. the door handles are held in by two screws on the '28's, an d by a threaded collar on '29 models.
