1931 Essex head bolts

I was looking at the 1931 Essex on E-bay and they said it had broken head bolts. Are they head bolts or are they studs? I also notice that some look like they were broken in the block. So how hard would it be to remove the studs from the block? You would want to replace all the studs(head bolts) would you not? That would look like it would be a night mare.
